This Mediterranean style chicken recipe is a gorgeous treat for all.

 

A tasty meal to welcome Autumn or a new twist on a household staple (Chicken).

 

All you need is the following

 

Ingredients:

  • 2 x 175g fresh chicken breasts, butterflied
  • 40g prosciutto ham
  • 4 sprigs of fresh basil leaves and stalks
  • 1 large ripe tomato, sliced
  • A pinch of salt and pepper
  • The juice of 1/2 a lemon

 

The meal is perfect for 2 and only has 267 calories per serving

 

To make:

Preheat oven to 180˚C /350˚F.

Place the butterflied chicken on the tray which has been lined with foil.

Top with the tomato, basil and sliced ham

 

Add the lemon juice and salt and pepper.

Cover with foil and seal loosely to form a parcel.

 

Cook for 25-30 minutes until the chicken is cooked thoroughly.

 

Serve.

Store any leftovers…. Yeah right
